Warm up with this hearty fall soup, chock full of every healthy macronutrient! That&#8217;s why I love this soup&#8230;its a meal in a cup. &nbsp;Chicken is your lean protein, yams and kale are your complex carbohydrates, and almond butter is added at the end for your healthy fat. Finish it off with a squeeze of lime and not only is it healthy, it&#8217;s absolutely delicious! It&#8217;s great having other clean-eating friends in your circle and I think I got this recipe from my friend Kelsey, so just in case, I give her the recipe creds \ud83d\ude42&nbsp;<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/11\/2014-10-30_19.13.10-1024x576.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" src=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/11\/2014-10-30_19.13.10-1024x576.jpg\" height=\"360\" width=\"640\" \/><\/a><\/div>\n<div style=\"text-align: center;\">\n<b><u>&nbsp;Recipe:<\/u><\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"MsoNormal\" style=\"margin-bottom: 0.0001pt;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b style=\"font-size: x-large;\">Almond Chicken Soup<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p><b><\/p>\n<div style=\"text-align: center;\">\n<b>4 cups chicken stock<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b style=\"background-color: transparent;\">1\/2 onion, diced<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b style=\"background-color: transparent;\">1 minced garlic clove<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p><\/b><b><\/b><\/p>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"MsoNormal\" style=\"background: white; margin-bottom: .0001pt; margin-bottom: 0cm; mso-line-height-alt: 9.8pt;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>1 large sweet potato, diced<\/b><\/div>\n<p><b><\/p>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"color: #333333; font-family: 'Arial Narrow', sans-serif; text-align: center;\">\n<b>2 chicken breasts, 1\u2033 pieces(use Rotisserie chicken and shred apart for ease)<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>1\/2 cup almond butter<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>1 cup chopped kale<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>2 tbsp minced ginger<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>coarse salt and pepper<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>1\/2 lime<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>Combine stock, onion, garlic and sweet potato, bring to a boil. Reduce heat to<br \/>\nsimmer, add chicken and simmer 20 minutes.<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>In a small bowl combine almond butter and 1\/2 cup of soup into a paste. Add collard or kale and ginger to soup.<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>Bring to a boil then reduce heat to simmer for 5 minutes. Stir in almond paste.<br \/>\nSeason with salt and pepper.
