The dressing that you pour over the lettuce wraps is so good I could DRINK the stuff! I&#8217;m not even kidding. I adapted the sauce from Whitewater Cooks&#8230;keeping it a bit cleaner by leaving out a few ingredients but it was still divine. This is a great week night meal, and makes convenient leftovers for lunch the next day.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>Chicken Filling Recipe:<\/b><\/div>\n<div style=\"text-align: center;\">\n1 tsp coconut oil<\/div>\n<div style=\"text-align: center;\">\n2 pound ground chicken (could use ground turkey)&nbsp;<\/div>\n<div style=\"text-align: center;\">\n2 crushed garlic cloves<\/div>\n<div style=\"text-align: center;\">\n2 tbsp fresh grated ginger<\/div>\n<div style=\"text-align: center;\">\n1\/2 bag broccoli slaw<\/div>\n<div style=\"text-align: center;\">\n1 pepper sliced thinly<\/div>\n<div style=\"text-align: center;\">\n1 bag of bean sprouts<\/div>\n<div style=\"text-align: center;\">\n2 tbsp low-sodium soy sauce<\/div>\n<div style=\"text-align: center;\">\n1\/2 cup chicken stock<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/07\/1406666135636-576x1024.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" src=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/07\/1406666135636-576x1024.jpg\" height=\"640\" width=\"360\" \/><\/a><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nIn a pan, melt 1 tsp coconut oil and brown chicken &nbsp;with the garlic and ginger. Once it is cooked, add the remaining ingredients, cook 3-4 minutes and remove from heat.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nNow for the piece de resistance! The dressing!<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/07\/1406666108173-576x1024.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" src=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/07\/1406666108173-576x1024.jpg\" height=\"640\" width=\"360\" \/><\/a><\/div>\n<p><\/p>\n<div style=\"text-align: center;\">\n<b>Dressing<\/b><\/div>\n<div style=\"text-align: center;\">\nIn a blender or bullet combine the following:<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n1\/2 cup all-natural peanut butter<\/div>\n<div style=\"text-align: center;\">\n1 lime juiced<\/div>\n<div style=\"text-align: center;\">\n2 tsp sesame oil<\/div>\n<div style=\"text-align: center;\">\n3 tbsp sweet chili sauce<\/div>\n<div style=\"text-align: center;\">\n4 tbsp rice vinegar<\/div>\n<div style=\"text-align: center;\">\n4 tbsp soy sauce<\/div>\n<div style=\"text-align: center;\">\n&nbsp;2 garlic cloves<\/div>\n<div style=\"text-align: center;\">\n2 tbsp fresh grated ginger<\/div>\n<div style=\"text-align: center;\">\n1\/2 bunch cilantro<\/div>\n<div style=\"text-align: center;\">\n1 tbsp olive oil<\/div>\n<div style=\"text-align: center;\">\n1 tsp Sriracha (optional)<\/div>\n<p><\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/07\/1406666179888.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" src=\"https:\/\/kelowna.website\/6\/wp-content\/uploads\/2014\/07\/1406666179888.jpg\" height=\"400\" width=\"288\" \/><\/a><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\nNow, who really buys iceburg lettuce anymore when there are so many other varietals (grapes only??)? I for one, do not. However, I did make an exception this time, for the sake of the pictures and you know what&#8230;it was quite nice. &nbsp;The leaves are large enough that the filling doesn&#8217;t spill out.
